Jim Beam Devil's Cut is a Kentucky straight bourbon bottled at 45% in a 750ml bottle. It blends 6-year-old bourbon with bourbon drawn back out of the barrel wood itself.
The whiskey that soaks into the staves as bourbon ages is the "devil's cut". Jim Beam sweats it out of emptied barrels using water, agitation and heat, holds it until it balances, then blends it with the 6-year-old bourbon. The mash bill is 77% corn, 13% rye and 10% malted barley.
The tasting notes describe deep char, toasted oak and buttery vanilla on the nose, espresso, black tea, caramel and clove on the palate, and a long, smooth finish with a hint of sweetness.
