The Gael is an Irish whiskey from JJ Corry, named after the bicycle that JJ Corry designed, built, cycled and sold. It marks the first step in the revival of Irish whiskey bonding.
It is made up of some of the oldest whiskeys in the JJ Corry library, with ages ranging from 5 to 30 years. First-fill Bourbon casks are joined by second-fill sherry hogsheads, both Oloroso and Pedro Ximenez.
The nose opens with orchard fruit and a hint of ripe red apple, dominated by white peaches and apricots, with floral notes and touches of cut grass and Douglas fir. On the palate, orange hard candy turns to candied orange peel, then to cooked stone fruit such as apricot frangipane tart and peach cobbler.
