Kaiyo The Rye is a 10 year old Japanese rye whisky made from a mash bill of 65% rye and 35% malted barley. It is bottled at 46% in a 700ml bottle.
The whisky spent ten years in Sauternes wine barrels, then a further ten months maturing at sea in Kaiyo's floating warehouses. It is a limited edition of 350 bottles.
On the nose there are apricot, honey and rye spice. The palate layers golden raisin, peach and vanilla over peppery rye and toasted oak, and the finish is long and gently spiced, with dried fruit.
