Kaiyō Japanese Mizunara Oak Whisky (43%)

Kaiyō is a Japanese whisky matured in Mizunara oak casks. The name means ocean, and the whisky takes it literally: after its years in cask it goes on a final maturation at sea, a voyage of up to three months setting out from Osaka. The Mizunara casks are handmade, because the wood has a delicate grain. The whisky is bottled at 43%. The nose is delicate, with vanilla, ripe dried fruit and hints of cherry, followed by a long, lingering finish.
