Kaiyo The Rubi Japanese Mizunara Oak Finished in Ruby Port Pipes (75cl, 46%)

Kaiyo The Rubi is a Japanese malt whisky made from 100% malted barley, bottled at 46% ABV in a 750ml bottle without chill filtration. It spends three years in Japanese Mizunara oak, then three months of ocean maturation, then seven further years in Mizunara. A final four months in ex-ruby port pipes completes it. The nose opens with candied orange and toasted marshmallow, followed by sandalwood and mango. On the palate there are hints of dark chocolate and peppermint, with a high viscosity, leading into a long, warming finish.
