Kaiyo The Rubi Japanese Whisky (46%)

Kaiyo The Rubi is a Japanese malt whisky from Kaiyo's special release cask finish series. It is not chill filtered and is bottled at 46% abv. It spends three years in Japanese Mizunara oak, then three months at sea, as all Kaiyo whiskies do. Back in Japan it matures for a further seven years before a four-month rest in former Ruby port pipes. The nose offers candied orange and toasted marshmallow, with sandalwood and mango. The palate brings dark chocolate and peppermint with notable viscosity, leading to a long finish.
