Kaiyō The Rubi is a Japanese whisky in a 750ml bottle at 46% ABV, made from 100% malted barley distillate and matured in Mizunara oak.
It spent three years in Mizunara casks, then made a three-month sea voyage between Japan and the United States, a step Kaiyō credits with shaping the final character. Back in Japan it had seven more years in Mizunara, followed by four months in first-fill ex-Ruby port pipes.
The nose is delicate, with black currant, dried strawberry, cherry and ground black pepper. On the palate, milk chocolate, dried cranberry and candied orange give way to clove, mint, eucalyptus and oak spice.
