Kaiyo The Single is a 7-year-old Japanese single malt, distilled on a coffey still and first matured in bourbon barrels. It is then finished in handmade mizunara oak casks from the Ariake cooperage in Kyoto, which make an ocean voyage by ship. The name means 'ocean' in Japanese.
The brand credits the motion of the sea, changing temperatures and pressure with deepening the influence of the oak. It is bottled at 48% ABV in a 750ml bottle and is un-chillfiltered.
In the glass, sandalwood and incense from the mizunara sit over honey, vanilla and orchard fruit, followed by a long, spiced finish.
