Kavalan – Pedro Ximenez Sherry Cask Whisky (75cl, 59.9%)

Kavalan Pedro Ximenez Sherry Cask is a single-cask Taiwanese single malt from the Kavalan Distillery in Yilan County. Each bottle comes from one Pedro Ximenez sherry cask and is bottled at cask strength in a 75cl bottle, non-chill filtered and with no added colour. It belongs to Kavalan's Solist series, in which a single cask is bottled on its own rather than blended to a standard strength. Yilan's subtropical climate speeds up maturation, so the whisky is bottled when the cask is ready rather than at a set age. The nose brings raisins, fig jam, toffee and dark chocolate, with rosemary and lemongrass. The palate is silky and full-bodied, with honeyed dates, cocoa, nutmeg and warm honey syrup, and the finish is long and sweet.
