Kavalan Solist Pedro Ximénez Cask is a single malt from Yilan, Taiwan, in a 70cl bottle. It is matured in Pedro Ximénez sherry casks from Jerez and bottled at cask strength from a single cask. This release carries the signature of Ian Chang, Kavalan's founding master blender.
The nose offers raisin syrup, fig jam, ripe dates, dark toffee and molasses. The palate is viscous and creamy, with Pedro Ximénez sherry, dark chocolate, prune compote, caramelised nuts and dried fruits. The finish is very long and syrupy, with cocoa and raisins.
