Kentucky Owl The Wiseman Bourbon (75cl, 45.4%)

The Wiseman is a Kentucky bourbon at 45.4% ABV, blending whiskeys of 4 to 8.5 years old. It is the first Kentucky Owl release distilled by the brand itself, in collaboration with Bardstown Bourbon Company, and was blended by master blender John Rhea. The blend joins Kentucky Owl's own 4-year-old wheated bourbon and 4-year-old high-rye bourbon with sourced Kentucky bourbons aged 5.5 and 8.5 years. The name looks back to 1879, when the pharmacist Charles Mortimer Dedman founded Kentucky Owl and sold his whiskey as The Wise Man's Bourbon. The nose is sweet vanilla and caramel with cloves, cinnamon, a touch of cocoa, stewed orange peel and white pepper. The palate is rounded, with baking spice, dried fruit and a faint hay-like woodiness. The finish is lingering spice and vanilla, faintly drying.
