Kilchoman 'Casado' is an Islay single malt, a 2022 limited edition of 12,900 bottles at 46% ABV. Thirty-eight casks of six-year-old bourbon-matured spirit, distilled in 2014 from malt peated to 50ppm, were married for two years in two 6,000-litre Portuguese red wine vats. 'Casado' is Portuguese for 'married'.
Founder Anthony Wills bought the vats, which were toasted to different char levels. The whisky is non-chill filtered and of natural colour.
The nose pairs campfire smoke with peach, plum and cherry, then marzipan. Pepper and spice lead the palate over dry, salty peat, apricot and lemon. The finish is long and spiced, with stewed fruit.
