Kilchoman – Fino Sherry Matured 2020 (75cl, 46%)

Kilchoman Fino Sherry Matured 2020 is an Islay single malt bottled at 46% in a 75cl bottle. It spent its whole maturation, not just a finish, in twelve fino sherry butts from Bodega Miguel Martín in Spain, eleven of them fresh and one refill. It was the first Kilchoman matured in fino casks and the fourth and final limited edition of the distillery's 2020 series, with 10,500 bottles worldwide. It is natural colour and non-chill filtered. The nose is fresh and floral with a coastal edge, with green apple, tropical fruit, light citrus and malty sweetness. Citrus sweetness, cooked fruit and maritime peat smoke come through on the palate. The long finish is dry and saline, with gentle smoke, cashews and almonds.
