This is a 9-year-old Islay single malt from Kilchoman, finished in Sauternes wine casks and bottled at cask strength, 55.9% ABV, in a 75cl bottle. It belongs to the Cask Evolution series selected by the importer ImpEx Beverages.
Kilchoman has been Islay's farm distillery since 2005, and here its peat smoke meets the honeyed fruit of Sauternes.
The nose combines buttery sweetness, smoky peat and orange zest. The palate brings thick vanilla syrup and honeyed fruit with lemon peel and peat smoke. The finish is long and smooth, with creamy vanilla, juicy nectarine and peat smoke.
