Kilchoman Sauternes Cask Matured is an Islay single malt bottled at 50% ABV in a 75cl bottle. This 2024 release of 23,000 bottles is non-chill-filtered and of natural colour.
It spent its whole maturation of at least five years in Sauternes casks from the 2017 and 2018 vintages, 22% fresh and 78% refill. The spirit is double-distilled and peated to around 50 ppm phenols.
The nose is creamy and buttery with ripe fruits, a hint of salty sea air and subtle peat smoke. The palate has butterscotch and floral notes with tropical and candied fruits, and peat smoke throughout. The finish stays sweet, with clean, lingering smoke and a rich texture.
