This is the first bottling in Knappogue Castle's Cask Finish Series. It starts as the house 12 year old, a triple distilled single malt made from malted barley in copper pot stills and matured in bourbon barrels, then finished in French oak casks from Château Pichon Baron in Pauillac that previously held claret.
It is bottled at 46% ABV, non-chill filtered, in a 75cl bottle. This was a limited release of 1,100 bottles per label.
The wine casks move the character towards red fruit. The nose is soft, with ripe strawberry and red berries, golden raisin, apricot, plum, vanilla, toffee and malt. The palate is juicy and tart, with cranberry among the red fruit.
