Knob Creek 12 Year is a small batch Kentucky straight bourbon, aged for 12 years in new charred American oak barrels and bottled at 50% ABV in a 750ml bottle. It is non-chill filtered.
It is made at the Jim Beam Distillery in Clermont, Kentucky, from a mashbill thought to be 75% corn, 13% rye and 12% malted barley. The barrels are charred to the #4 'alligator' level.
The nose shows toasted oak, dark caramel, vanilla and aged leather, with a little espresso and marshmallow. The palate is toffee, brown sugar, cinnamon, nuts and dried fruit, and the finish is long, with tobacco leaf, dark chocolate and baking spice.
