Knob Creek is a nine-year-old Kentucky straight bourbon, bottled at 100 proof (50% ABV) in a large 1.75 litre bottle. It is made at the Jim Beam distillery in Clermont, Kentucky.
It matures in new charred American white oak barrels with a deep level 4 char. The barrels chosen for Knob Creek come only from the middle floors of the nine-storey rackhouses. The mashbill is 75% corn, 13% rye and 12% malted barley.
The nose is deep toffee, toasted oak and dried orange peel, with leather and cedar beneath. The palate brings caramel, vanilla, oak and rye spice. The finish is long and warming, with oak and dried fruit.
