Knob Creek is a Kentucky straight bourbon, bottled at 50% ABV (100 proof) in a 750ml bottle and non-chill filtered. It is made at the Jim Beam distillery in Clermont.
Booker Noe, a sixth-generation Jim Beam master distiller, created it, and it launched in 1992 as part of the Jim Beam Small Batch Bourbon Collection. The mashbill is 77% corn, 13% rye and 10% malted barley, matured in new American white oak barrels with a deep level four char.
The nose is typically honeycomb, brown sugar, baking spices and charred oak. The palate brings caramel, vanilla and peppery rye, and the finish is long and warming, with honey and cinnamon.
