A Kentucky straight bourbon in a 375ml bottle, bottled at 50% ABV and made at the Jim Beam distillery in Clermont. Knob Creek was created by Booker Noe, grandson of Jim Beam, and launched in 1992 as part of the Jim Beam Small Batch Bourbon Collection.
The mash bill is 75% corn, 13% rye and 12% malted barley, and the spirit is aged in new American white oak barrels with a Level 4 char. It carries no age statement.
Caramel and toasted oak lead the nose, with marshmallow, vanilla and a trace of rye spice. On the palate, brown sugar and caramel meet clove, nutmeg and black pepper, with a little dark cherry. The finish is long and warming, with oak, rye spice and leather.
