A nine-year-old Kentucky straight bourbon from Knob Creek, drawn from a single unblended barrel and bottled at barrel strength of 60% ABV (120 proof) in a 750ml bottle.
It is made at the Jim Beam distillery in Clermont from a mashbill of 75% corn, 13% rye and 12% malted barley, and aged in new charred American white oak.
The nose combines spiced wood, black pepper, cinnamon, allspice, nuts and deep caramel, with a hint of navel orange. Wildflower honey and sweet corn open the palate, followed by roasted cinnamon, vanilla and minty rye spice. The finish is long and warm, with oak, vanilla and a gentle peppery heat.
