Knob Creek is a bourbon created by Booker Noe of Jim Beam, intended to bring back the flavours of the years before Prohibition. It is matured in American oak for at least 9 years and bottled at 50% ABV, or 100 proof, in keeping with pre-Prohibition tradition.
The nose brings peanut butter, charred wood and caramelised sugar, with walnut, spice and dark chocolate. The palate is lively and full, dry yet smooth, and the finish is very long, recalling vanilla.
