Koch El Mezcal Elemental Espadín (70cl, 40%)

Koch El Mezcal Elemental Espadín is a 40% mezcal from Oaxaca, made from Espadín agave (Agave angustifolia) and intended for cocktails and mixology. The agave is harvested at around seven to nine years old. The hearts are baked for four days in a conical ground-level oven, crushed with a stone mill pulled by oxen, and fermented in open cypress vats for six to eight days. The liquid is then double distilled in a 350-litre copper still with a rectification plate. The nose is sweet, with marshmallow and roasted pineapple, citrus and hints of mandarin and mango. The palate is creamy, with sweet yellow pepper and coconut milk, and ripe banana appears in the finish.
