Koch Elemental Mezcal (70cl, 40%)

Koch Elemental is a mezcal made entirely from Espadín agave, grown for seven to nine years before harvest in Oaxaca, Mexico. It is bottled at 40% in a 70cl bottle. Production follows traditional methods: the piñas are cooked in an underground oven and crushed with a horse-drawn tahona. Fermentation takes place naturally in wooden vats, followed by double distillation in copper stills. The nose is discreet but layered, with cooked agave, tropical fruit such as pineapple, and herbal, lightly smoky notes. The palate is soft and creamy, with fruity sweetness, mango or citrus, and occasional vegetal or peppery touches. The finish is clean and balanced, mineral or earthy, with a little smoke and spice.
