Koval Organic Dry Gin is a certified organic, kosher gin from Koval Distillery in Chicago, Illinois, bottled at 47% ABV in a 75cl bottle.
Rather than a neutral spirit, the base is an organic rye white whiskey, which is redistilled with 13 botanicals, among them juniper, angelica root, coriander, grains of paradise and rose hip. Only the heart of the run is kept.
The nose is juniper and wildflowers, with lavender and hibiscus. The palate is dry and vibrant, with emerald grasses, golden citrus, white pepper and round florals. The finish is very dry, with anise and peppercorn. It is crisp enough to sip neat and also suits a martini.
