Koval Single Barrel Bourbon is an organic bourbon from Koval Distillery, aged in charred new American oak.
Its mash bill is at least 51% corn, with millet in place of the usual rye or wheat. Millet is a gluten-free ancient grain.
The nose offers mango chutney, with a soft vanilla note running through. The palate is sweet with apricot custard, and the finish brings peppery caramel and a lingering trace of clove-spiked tobacco.
