Koval Single Barrel Bourbon is made in Chicago, Illinois, from a mash of 51% corn and 49% millet in place of the more usual rye or wheat. It is bottled at 47% ABV in a 750ml bottle.
The spirit is aged in new charred American oak, in 30-gallon barrels, and bottled barrel by barrel from the heart cut only. It is certified organic and Kosher.
The distillery's notes begin with mango chutney and a soft vanilla note from the millet, move to apricot custard sweetness, and end on peppery caramel with a touch of clove-spiked tobacco.
