Koval Single Barrel Bourbon is an American bourbon in a 50cl bottle, from the first distillery built in Chicago since Prohibition. Robert and Sonat Birchner founded it in 2008, and it is kosher certified and uses only organic ingredients.
The mash is 51% corn, with millet in place of the usual rye. Millet is a gluten-free grain grown mainly in Asia and Africa. The spirit rests in new, heavily toasted American oak barrels.
The aromas are intense, sweet and buttery. The finish recalls dark chocolate, with a pleasant caramelised note.
