Koval Single Barrel Bourbon is a 47% ABV craft bourbon from Chicago, bottled in a 750ml bottle, with each bottle drawn from a single barrel.
Its mashbill is unusual: 51% organic corn and 49% organic millet. It is aged in 30-gallon new charred oak barrels, smaller than the standard 53-gallon size, and only the middle cut of each distillation run is used.
The nose is usually described as tart tropical fruit, black pepper and a buttery richness. The palate is soft and slightly chalky, with sweetness, mango chutney, vanilla and light char smoke. The finish is medium, powdery and peppery, with dried fruit and sulphured apricots.
