Koval Single Barrel Millet is an American grain whiskey in a 750ml bottle, bottled at 40% ABV. It is distilled in Chicago from 100% organic millet, with no corn, wheat or barley in the grain bill.
Koval uses a heart cut only distillation, discarding the heads and tails, and ages the spirit for three years in American oak before bottling from individual barrels. The distillery was founded in 2008 and was the first in the United States to make whiskey from millet.
The nose is sweet grain and vanilla with star anise, licorice and a faint smokiness. The palate runs from vanilla and caramel to clove, cinnamon and anise, and the finish is clean, ending dry with black tea and lemon peel.
