Koval Single Barrel Rye is an organic rye whiskey from Chicago, bottled at 40% ABV in a 750ml bottle. The mashbill is 100% rye, with no corn, barley or wheat, and only the middle cut of each distillation run is collected.
It matures for roughly three to four years in 30-gallon new charred American oak barrels, smaller than the usual 53-gallon size. Koval opened in 2008 in Chicago's Ravenswood neighbourhood.
The nose has nutmeg, cinnamon, charred sugar, jasmine, honey and vanilla. The palate brings chocolate sauce, gingerbread, ginger, coconut, almond and a touch of mint. The finish is maple-sweet and creamy, drying into peppery rye spice.
