A single barrel rye whiskey from Koval in Chicago, Illinois, made from 100% organic rye and bottled at 50% ABV (100 proof) in a 750ml bottle.
The rye is finished in casks that previously held pure maple syrup, which adds natural sweetness over the rye spice. Koval was the first legal distillery to open in Chicago since Prohibition.
Tasting notes describe warm cinnamon and baking spice on the nose with tart cherry, maple, molasses and toasted rye bread. The palate opens maple-forward before rye spice and tart fruit rebalance it, and the finish is long and creamy with chai tea, warm spice and a little maple.
