Les Clos de Paulilles Rimage 2022 Banyuls

Les Clos de Paulilles Rimage 2022 is a Banyuls made entirely from Grenache Noir. The vines grow on terraced, schistous slopes so steep that they can only be worked by hand, and yields run between 18 and 30 hl/ha. The grapes are picked by hand early in the morning, sorted again in the cellar and destemmed. Fermentation lasts about five weeks in small closed steel tanks. Grape spirit is then added to stop it, and the wine rests for up to 18 months in steel without contact with air. It is bottled without fining or filtering. The colour is deep ruby. Ripe cherry, blackberry, blackcurrant and preserved blueberry show on the nose. The palate balances sweetness, alcohol and structure, and the finish is crisp and intense.
