Little Book Chapter 10: All The Wiser (75cl, 61.3%)

Little Book Chapter 10: All The Wiser is the tenth annual release from Freddie Noe, master distiller at the James B. Beam Distilling Co. in Clermont, Kentucky. It is a blended straight whiskey, bottled uncut and unfiltered at 61.3% in a 75cl bottle. The blend brings together 14-year-old Basil Hayden, 11-year-old Knob Creek, 10-year-old Booker's, 9-year-old Baker's and 4-year-old Jim Beam bourbon, the last finished in sherry and toasted bourbon casks. For this chapter Noe moved from precise blending to a more intuitive approach. The nose is described as fig, raisin and molasses. The palate is full-bodied and velvety, with caramel, cinnamon and oak, and the finish is long with seasoned oak and raisin.
