Long Pond Cambridge 2005 is an Agricole-style rum from the STCE (Simon Thomson Cambridge Estate) range. It matured entirely in a tropical climate in bourbon casks, and its ester content is between 550 and 700 grams per hectolitre of pure alcohol.
The nose is fine and racy, with apricot, minerals, mango, roasted coffee and sandalwood. The palate is lively yet full, with mineral, smoky and peppery notes, apricot, mango, vanilla and wood.
The finish is long and rich, with cane sugar, molasses, geranium honey, salted butter caramel and toffee.
