Los Siete Misterios Doba-Yej Mezcal (70cl)

Doba-Yej is a mezcal from Los Siete Misterios, made from espadín agave, which the name refers to in an old Mexican tribal language. It comes from plants grown on a single estate. It is the only mezcal in the range distilled in a copper still of the cobra type. The agave hearts are cooked in an underground oven, crushed in wooden canoes and fermented naturally with wild yeasts. The nose shows lemon and lime, lightly smoky sweet woods and a hint of blueberry. The palate is soft, round and moderate in body, balancing alcohol and fruit sweetness, with citrus notes and a long caramel finish.
