Lustau Los Arcos Amontillado Sherry (75cl)

This is an Amontillado sherry from Lustau, made from Palomino grapes in the Jerez region of Andalusia. It ages in two stages: first under a veil of flor, which adds freshness and complexity, then through oxidation, which builds structure and aroma. Both take place in American oak casks using the solera system. In the glass it is a deep amber. The nose offers walnuts, toasted almonds, sweet spice and dry wood. The palate is harmonious and savoury, with a thread of bitterness that underlines its dry, firm character.
