This is a 30 year old single malt from Macallan, matured exclusively in oak casks seasoned with sherry. It is bottled at 43% ABV in a 75cl bottle.
The casks are a mix of European and American oak, seasoned with sherry in Jerez before being filled in Speyside. No bourbon casks are used, which keeps the character entirely sherry-led.
The nose brings chocolate-covered orange, dried malt, clove, nutmeg and a thread of wood smoke. The palate offers toffee, fudge, ripe cherry and dried vine fruit, with candied lemon and clove late on. The finish is long, with toasted oak, black cherry and vanilla.
