Mary Dowling Toasted Double Oak Barrel Strength Bourbon

This is a wheated bourbon bottled at barrel strength under the Mary Dowling name. It is matured in two stages in new American oak from Kelvin Cooperage. The first barrels are heavily toasted with a Char #3, and the second are lightly toasted with a Char #1. The two-step maturation lengthens the ageing and is meant to give a deeper, richer flavour. Tasting notes mention tobacco, chocolate, cherry, oak, cinnamon, nutmeg, stone fruit, baking spice and brown sugar. The finish brings back cherry and stone fruit, with lingering dry spices.
