McCarthy's 6 Year Old is a single malt from Clear Creek Distillery in Hood River, Oregon, finished in Pedro Ximénez sherry casks. It is bottled at cask strength, 56.1% ABV, and is non-chill-filtered.
The spirit is distilled from peat-malted Scottish barley and matured for six years in Oregon white oak before the sherry cask finish.
The nose is saddle leather, sweet tobacco, hazelnut and bergamot tea, with cold camp-fire smoke. On the palate come black cherry jam, raisin, brown sugar and toasted oak over peat smoke, with bitter chocolate and chicory. The finish is long and warming, with tobacco leaf and wood smoke.
