This mezcal comes from Oaxaca, Mexico, and is made exclusively from the wild agave tobaziche by Palenque Juan Hernandez, using traditional earth ovens.
The nose shows complex notes of dry field, damp earth, wild herbs, minerals and a sweet citrus undertone. The palate is warm and enveloping, with balance between smoke, savouriness and a soft persistence recalling flint and black pepper.
It pairs well with grilled meats and spicy mole dishes.
