A mezcal made from espadín agave grown in the arid, rocky soils of Oaxaca. It is cooked in clay-covered pit ovens, giving the name Olla De Barro, and aged in wooden casks. The result is an intense smoky, mineral and earthy spirit with hints of dried fruit and oriental spices. On the palate it is firm yet enveloping, with a persistent finish. It suits grilled meats, aged cheeses and spicy dishes.
