Mezcal San Baltazar - Alipus (70cl)

A mezcal from Oaxaca, made exclusively from locally cultivated natural agave. It is produced by traditional methods, including cooking the agave plants in underground ovens, which gives the spirit its distinctive smoky complexity. In the glass it is clear and bright. The nose carries peat, aromatic herbs and light damp-earth notes linked to the volcanic soil, while the palate is enveloping and rich, with a balance of softness and a persistent finish with spicy and slightly mineral nuances. It can be used as a base for cocktails or paired with traditional Mexican dishes such as tlayudas or grilled meat.
