Mezcal Tobalá Olla De Barro (70cl)

A mezcal from the highlands of Oaxaca, made from agave Tobalá. Fermentation takes place in terracotta amphorae, the olla de barro, which give a particular minerality and an intense, enveloping aromatic texture. The agave is cooked in traditional ovens and the spirit is slowly aged in neutral wood casks. On the nose there are wet earth, delicate smoky notes and herbal hints, balanced by dried fruit and wild honey. On the palate it is elegant, with a vibrant balance between smoke, citrus freshness and a clean, persistent finish. It can be enjoyed neat or with spiced tapas.
