Dair Ghaelach is a single pot still Irish whiskey from the Midleton Distillery, here the Grinsell's Wood Tree #9 Batch #1 bottling at 58.2% in a 70cl bottle. It was matured mainly in American oak bourbon barrels and finished in virgin Irish oak hogsheads. The edition was first released in 2015.
The producer's notes describe pot still spices and woodland notes on the nose, with vanilla, chocolate honeycomb, coffee beans, red berries, pineapple and ripe banana. On the palate, clove and cinnamon give way to dairy fudge, milk chocolate and stewed apple. The finish is very long, with sweet spices fading slowly and Irish oak having the last word.
