An Israeli single malt from Milk & Honey Distillery in Tel Aviv, bottled at 46% ABV in a 75cl bottle and not chill-filtered. It is matured in ex-bourbon barrels and STR red wine casks.
It is made from 100% unpeated malted barley, double distilled in copper pot stills. The hot, humid climate of Tel Aviv speeds up maturation.
The nose is waxy honey and ripe peach, with vanilla, floral oak and a baked, biscuity note. The palate brings caramelised peach, apricot jam, lemon curd and golden syrup, then sultanas, pear and crème brûlée, with bitter cocoa and black pepper. The finish is medium, with gentle oak, lingering honey and a trace of dark cocoa.
