Montelvini Cuvée dell'Erede is an Extra Dry Prosecco Treviso DOC from the Serena family's Montelvini winery in Venegazzù, made from selected Glera grapes. The grapes ripen towards the end of September and are gently pressed, then fermented at controlled temperature.
The second fermentation takes place in tank with liqueur de tirage at 16°C. The sparkling wine is then chilled to 4°C and left on its yeasts before being filtered under pressure and bottled.
The nose is fresh and intensely fruity, recalling acacia blossom, wisteria, wild apple and mountain honey, and the bubbles are fine and persistent. It suits shellfish, light fish and molluscs, and works as an aperitif.
