Quiet Rebels: Simon is an organic single malt from Nc'nean. The whisky began maturing in shaved, toasted and re-charred red wine casks, then was finished in 100% stout casks from Innis & Gunn.
Those stout barrels had previously held Nc'nean whisky, which brings the story full circle. The emphasis on cask character reflects Simon's passion for warehouse work and cask stewardship, and the bottling is built around that interest.
