Neversink Select Cask Finished Bourbon is made from a mash of 60% corn, 20% winter wheat and 20% malted barley, with the grain grown in New York. It is twice distilled in a pot still.
The spirit spent a minimum of two years in 15 and 30-gallon new charred American oak barrels, then moved to an apple brandy cask for finishing. It was reduced to 43% ABV.
Wheat brings a mellow complexity alongside spice and vanilla from the oak, while the apple brandy cask adds apple highlights and a fuller body. A hint of sweetness closes each sip.
