Nikka Discovery Series Yoichi Aromatic Yeast (75cl, 48%)

Nikka Discovery Series Yoichi Aromatic Yeast is a peated single malt from Yoichi Distillery on Hokkaido, released in 2022 as part of the annual Discovery Series. It is bottled at 48% in a 750ml bottle. The series explores unusual production variables, and this release is about yeast. It was fermented at low temperature with an aromatic yeast from Nikka's yeast culture collection, giving estery aromas reminiscent of ginjyo sake over the peated Yoichi spirit. The nose combines apricot, baked apple, berries and warm peat with mushroom, coal fires and melon. The palate is sweet barley, wood, brown sugar, pear, banana and melon, with herbal undertones. The finish brings apple, pear, spice and light smokiness.
